Suppers Done - Chef Carie's Italian Cheese Sticks

With our supper last night, I made homemade cheese sticks.
We have at times ordered cheese sticks, who don't love a side of these. They can be pricey for just a few sticks, so I decided to make my own. And it turns out to be more cost effient as well. Save money and get more, now that's what I call a win. And tastes much better than frozen cheese sticks you buy from a store.
Chef Carie's Italian Cheese Sticks
Ingredients
8 Mozzarella string cheese, cut in half (16 pieces)
1/2 C. All purpose flour
1/4 C. Corn Starch
2 eggs (Farm Fresh)
1 C. Italian Bread crumbs
Oil for frying (deep frying)
Directions
1. Cut the Mozzarella string cheese in half, equalling 16 pieces. Place in the freezer on a cookie sheet for at least an hour. This is to keep the cheese firm while frying.
2. In 3 different bowls, add in one bowl the all purpose flour and cornstarch mix together and set aside, in another bowl, beat 2 eggs and set aside, and the last bowl add breads crumbs.
3. Remove string from freezer, using one piece at a time coat cheese sticks in flour, then egg, coat again in flour mixture, one again in egg and finally, coat well with bread crumbs pressing firmly. Repeat process in small batches of 4 to prevent over crowding while frying. Fry cheese sticks until golden brown on all sides. Turning while frying with tongs. Repeat process until all your cheese sticks are coated and fried golden brown.
4. After frying the cheese sticks to a golden brown drain on a plate with paper towel.
Serve them as a side with any meal, like I did with my quail pot pie or as an appetizer with marinara or ranch dressing. As a tip you can freeze the cheese sticks before frying, after coating and deep fry them for later.
